Maple Pancakes
Wet Ingredients
2 tbsp oil
1-1 1/2 c water
2 eggs
2 tbsp maple syrup
¼ c agave
(2 tbsp sugar if used instead of agave)
Dry Ingredients
1½ c oat flour
¼ c brown rice flour
¼ c tapioca flour
½ tsp baking soda
½ tsp xanthan gum
½ tsp salt
Directions:
Mix only the flours together until well blended.
Add the baking soda, salt, and xanthan gum on top of the flour mixture, without mixing.
Start adding the wet ingredients listed in the order above. Mixing each item individually. (Add the first egg, then mix; add second egg, and repeat)
Tip: Adding too many wet ingredients at one time will change the texture and end results of the product.
